Fajita & Margarita Party
"Fajitas & Margaritas" - it even sounds festive! A perfect party for gathering a group of friends together for an informal, fun evening. Most everything can be made ahead. All you have to do at the last minute is to grill the chicken or beef. Make things easy on yourself and recruit one of your friends for this task! Then sit back and enjoy.
Memories ... While doing the photo shoot for this feature, my husband and I were reminded of a Fajita and Margarita party that we once hosted. We had about 20 people over and my husband could not make Margaritas fast enough. He recruited a friend to help and with two people running two blenders, they still couldn't keep up. Needless to say, a good time was had by all! When we finally made it down to the kitchen the next morning, we were greeted with a sticky floor, sticky countertops ... sticky everything ... from a few too many spilled margaritas! Ah - those were the days!

Table Decorations:
Color! Bright colors add to the festivity. Mix and match table linens. Reds, oranges, pinks, yellows and blues. Or buy brightly colored paper napkins.

Make the Bisochito cookies up to a week ahead. Black Bean Salad and the Salsa can be made a day ahead. Sautéed peppers for serving with the fajitas can be cooked early in the day and reheated in the microwave. Chop up the other toppings a few hours in advance and refrigerate until it's time to serve. Make the Guacamole a half-hour before the party is to start. Mix up the Margaritas anytime the day of the party and refrigerate.
When guests arrive, serve Margaritas with tortilla chips and Guacamole. Fire up the grill and recruit someone to grill the chicken and beef. Meanwhile, reheat the peppers and set out all of the fajita toppings in decorative bowls. Slice the chicken and beef and arrange on serving platters. Heat the tortillas in the microwave just before announcing "Dinner's Ready!".
Let guests serve themselves.
