Cranberry Scones in an Easter Basket
Banana Bread
I have a long tradition of reaching out to others ... not because anyone told me I should, but just because it felt like the right thing to do. With an elderly mother and mother-in-law, I have recently taken to packaging up leftovers into individual portions and freezing them, then carrying them to my "mothers" when I visit. They can put them in the freezer and heat them when they want to ... they are getting good home-cooked meals without all the additives in the packaged dinners that they usually buy.
We encourage you to "reach out" too ... to anyone in need. An elderly family member, an ill friend, a shut-in neighbor, or someone who just needs a bright spot in their day. Here we suggest recipes that are especially good for reaching out, but remember: almost any leftover can be packaged nicely and frozen for a ready meal for someone you know.
Freezer-quality zip-top plastic bags, foil "pot pie" pans, mini foil loaf pans, and "disposable" plastic containers from makers such as Glad and Ziploc are perfect for packaging your reach out meals into individual or small portions. Be sure to label them with cooking or reheating instructions. Remember: the idea is to make it as easy as possible for the recipient of your generosity.
