I was chatting with a subscriber about ideas for dinners, and she told me that she and her husband enjoy having a hearty soup for a weekday dinner at this time of year. Add some bread and/or a salad and you've got a complete meal. So, this week we feature Hearty Soups. |

We have three new soup recipes for you. Don't be put off that they may take more than 30 minutes. Each one of the soups is technically easy to prepare, but may not be "quick" because of the simmering time required. Each one makes a great dinner on its own and all can be prepared ahead. We also include three recipes to help you with what to serve on the side. The soups make great Reach Out & Cook!™ meals, too. |

The great thing about soups is that you can make them ahead and refrigerate or freeze them. If you freeze them, portion them out into individual serving size containers. That way, you can heat up as little or as much as you want. I've even frozen soup in Ziplock bags ... squeeze out all the air and they store flat in the freezer. |

Mexican Meatball Soup with Rice & Cilantro
I call this hearty soup a Mexican variation of Italian Wedding Soup. Small meatballs are simmered in a tomato-based broth that is spiced up with bottled salsa. This soup warms your soul. Comfort food at its best.

Gwynne's Minestrone Soup
My sister has been making this soup for years and she always raves about how good it is and how easy it is. So I finally made it, and it is delicious! And very easy. I have to say I did "complicate" it a bit by replacing her "parsley flakes" with fresh parsley and "frozen green beans" with fresh. And I added freshly-grated parmesan to serve on top.

Curried Chicken Soup
A twist on regular old chicken soup, this recipe includes some Indian spices and is thickened with a purée of vegetables. Use a mild curry powder for a nice flavor without a lot of heat. Try it for something different.

Cornmeal Biscuits with Cheddar & Chipotle
A perfect accompaniment to winter soups or chili, these biscuits are light, tender and full of flavor thanks to the cheddar cheese and the chipotle chiles. Afraid of chipotles? Don't be! They don't add that much heat but give a nice tang. That said, you can always omit them if you want to. These biscuits freeze beautifully so you can whip up a batch and throw them in the freezer to have on hand.

Light Popovers
This light version of the classic popover is so easy to make. It uses egg whites instead of whole eggs and very little butter. Popovers can be made in advance and frozen and they reheat wonderfully ... I know because I've done that several times. So they are perfect for entertaining.
