  'Tis the season for entertaining, but it's also a busy time of year, so this week we're featuring recipes that work well for casual entertaining. We have a "comfort food" recipe (pot roast!), perfect for cold nights and terrific for leftovers; an easy salmon dish that makes a casually elegant dinner; and a chicken dish with a northern Italian flair that can be prepared ahead and is perfect for buffet serving.

Red-Wine Pot Roast with Porcini

Red wine and dried porcini mushrooms contribute a robust & hearty flavor to this classic "comfort food" dish. This dish can be made ahead and is actually better if you do that. Make it on the weekend and have it for at least two meals during the week. Or turn it into a casual entertaining meal with the Fennel Mashed Potates and a green salad. Leftovers are great over papparadelle pasta.
