The holidays are just about over and, for many of us, that means it's time to think about how to get rid of all those extra pounds we put on. So this week we offer a selection of Spa Recipes. But don't think "cardboard" or "I'm going to be hungry" … these are delicious and satisfying meals. Spa recipes are characterized by being low in calories and fat, but not low in flavor or interest.  They are also usually fairly easy to prepare. So try them; you won't be disappointed. And you can always serve yourself a larger portion and still feel good that you are eating "good-for-you" food.

 

We've added eleven new recipes this week, all adapted from recipes in authentic spa cookbooks.  We feature a beef stew, a seafood chowder, and an Italian chicken dish this week with a simple tomato-basil sauce. Rounding out our main course selections are two great salad dressings that you can use all year round to make sure that those "healthy salads" really are healthy, and three new sides, including … believe it or not ... popovers that are low in fat and can be made ahead.  We've also included a smoothie recipe (did you know that eating a good breakfast is important to losing weight?). And we even have a new dessert and yes, it, too, is a spa recipe, but good enough to have any time.

Light Seafood Chowder

This light chowder is easy to make and you'll never miss the cream and butter traditionally associated with chowder. A great way to start off the diet, or just to stay in shape. Light Popovers and a salad with Light Vinaigrette Dressing are perfect on the side.

Light Popovers

This light version of the classic popover is so easy to make. It uses egg whites instead of whole eggs and very little butter. Popovers can be made in advance and frozen and they reheat wonderfully ... I know because I've done that several times. So they are perfect for entertaining.

Chicken Milanese



A crunchy and flavorful chicken dish that is a healthy alternative to fatty fried chicken, this dish is a great example of how good and satisfying a "spa meal" can be. The Tomato Basil sauce makes it "Milanese" so be sure to include it in your meal plan.
