This week we feature Winter Meals. These dinners are best described as comfort food ... perfect for cold winter nights. This week's features include new twists on two old favorites: Tuna Casserole (a grown-up version) and American Chop Suey (with mozzarella and a touch of cinnamon). We've also added another chicken dish with a great blend of flavors. And what better dessert to go with comfort food than Apple Crisp?

By the way ... all of this week's new recipes make great Reach Out meals.

Three of our new recipes are featured here ... find the other on our Members page.

Cuban-Spiced Chicken Thighs with Chorizo & Rice

A perfect meal for a cold winter evening. Chicken thighs stewed with rice, tomatoes, onions and red bell peppers and spiced with a touch of paprika and saffron. A friend who thought she didn't like dark meat admitted that she loved these!

Cinnamon Apple Crisp

The best part of apple crisp is the crunchy topping so this recipe includes lots of it. We use the same filling as our apple pie, so consider this apple pie without the fuss of a pie crust.

Fresh Tuna Noodle Casserole with Mushrooms & Herbs

A grown-up version of the classic kid's favorite, this casserole uses fresh broiled or grilled tuna in place of canned, fresh saut←ed mushrooms and a from-scratch white sauce in place of the canned cream-of-mushroom soup, panko bread crumbs in place of canned, and dried herbs. A definite step up in flavor. My husband likes to call this "expensive tuna casserole".
