Chicken Chili

This is not your standard beef and bean chili, but a Mexican seasoned Chicken Chili with not a bean in site. It's a colorful blend of red sweet peppers, green jalapenos and white chicken meat. A dash of cinnamon and some grated chocolate add an authentic Mexican touch. Pile on the garnishes and you've got a feast.

Vegetable Lasagna with Roasted Garlic Sauce

A light, flavorful vegetarian lasagana that uses thinly-sliced potatoes instead of pasta. Don't skip the roasted garlic sauce: it really makes the dish.

Spicy Skewered Shrimp

A simple preparation and a short cooking time make this an ideal quick meal. You can cook the shrimp under a broiler or you can cook them on the grill. Crank up the heat by adding more crushed red pepper to the marinade. These shrimp are also great served as an appetizer on a large platter with Ranch Dressing or a combination of ketchup and prepared horseradish.
