What to eat this week ...
This is where we present the weekly meal plan: our recommendation of three dinners to make this week. Sometimes we'll even throw in an appetizer or a dessert.
I call this hearty soup a Mexican variation of Italian Wedding Soup. Small meatballs are simmered in a tomato-based broth that is spiced up with bottled salsa. This soup warms your soul. Comfort food at its best.
Skewers of chicken marinated in soy-sauce, ginger & rice wine, then broiled or grilled. Accompanied by an Asian stir-fry and rice. Looks great on the plate and tastes great too. An easy company meal. Don't be put off by the Asian label ... this dish is not spicy and has a wonderful blend of flavors.
A low-calorie dish that doesn't taste low cal. Cook the squash a day or two ahead and you can throw this dinner together in no time. Perfect for a quick weekday night and elegant enough for casual entertaining.
My mother-in-law has been making these for years and I always gobble them up. They are basically a shortbread with raspberry jam on top. An easy recipe to make with the kids. Perfect for a light dessert for a buffet or a holiday.
