This week's Meal Plan ...
This is where we present the weekly meal plan: our recommendation of three dinners to make this week. Sometimes we'll even throw in an appetizer or a dessert.

We've got a variety of recipes for this week's meal plan. The Quesadillas make a good appetizer or light supper; don't be put off by "spicy": you can control the amount of heat. Make the Chicken Pot Pie on the weekend or when you have some time and refrigerate or freeze for later. The Shrimp Pasta is quick and easy. Marinate the Pork Tenderloin the night before (or in the morning) and you've got a quick weeknight meal that's also great for entertaining. The Chocolate Cake is easy as pie (!) to make and very kid-friendly.
Portobello mushrooms marinated in balsamic vinegar and sautéed make a unique filling for quesadillas. You can control how spicy they are by adjusting the amount of serrano chiles. Topped with purchased fruit salsa and sour cream, these quesadillas make an elegant appetizer as well as an easy lunch or light supper.
Chicken Pot Pie ... the ultimate "comfort food"! This one is made from scratch and is loaded with chunks of chicken and little else. Make one large pie or several individual ones. The individual ones make great "Reach Out" meals.
This is another great weekday meal. Quick, easy, delicious and good enough to serve to company. You could substitute small bay scallops for the shrimp, or use a combination of the two.
I discovered the marinade for this pork many years ago and I have given it out to countless people. I've never had anyone not like this pork tenderloin. Tender and delicious ... worthy of any special occasion or even just a nice family meal. Good hot or at room temperature, so there is no pressure for exact timing. Also fantastic done on the grill.
One of our subscribers (whom we've dubbed "Dessert Boy") wrestled this recipe from his girlfriend and begged us to make it. I was skeptical since I don't usually start things with a mix but I decided to try it. Glad I did. This cake is so easy to make and so moist. It's delicious!
