Alicia's Salsa
This is a great salsa to make when fresh, ripe tomatoes aren't available. I created this recipe several years ago and I've given it away to many people. Everyone seems to like it. Crank up the heat by adding more chopped jalapenos. |

Mexican Meatball Soup with Rice & Cilantro
I call this hearty soup a Mexican variation of Italian Wedding Soup. Small meatballs are simmered in a tomato-based broth that is spiced up with bottled salsa. This soup warms your soul. Comfort food at its best. |

Chicken Fajitas
Fajitas ("fa-HEET-tahs") are a Tex-Mex dish traditionally made with flank steak. My chicken version is healthy, low-fat and delicious. Make them part of a Fajita & Margarita party and invite the whole gang over. Let your guests assemble their own fajitas, and have fun seeing who makes the biggest mess. |

Beef Fajitas
Fajitas ("fa-HEET-tahs") are a fun party food. You can make just about everything ahead and then grill the meat at the last minute. Lay everything out buffet-style and let your guests serve themselves. Have a contest for who makes the messiest or the neatest fajita. Here's my own recipe for Beef Fajitas. Pair them up with Chicken Fajitas for a Fajita & Margarita party. |

Black Bean Salad
A perfect accompaniment for almost anything Mexican or grilled, this salad is simple to make and can be made up to two days in advance. So it's great for entertaining, too. And all by itself it makes a tasty and nutritious lunch. |

Bisochitos
The anise seed adds a bit of a licorice flavor to these light and crispy cookies. Bisochitos are traditional New Mexican Christmas cookies, but I think that they are good anytime and make a light dessert for any Mexican or Southwestern party. |

Gypsy Stew
This is what I call a classic "one-pot". Everything goes in to one pot, and when you're done, you have a complete meal. All you have to add is tortillas or bread! |

Fish Tacos with Mango Salsa
Mango Salsa and sautéed fresh fish on a warm white corn tortilla. All you need to add is a Margarita! |

Margaritas for a Crowd
I call these "Margaritas for a Crowd" because they are weaker than a "Real Margarita." Rose's Lime Juice and limeade dilute the alcohol and add a sweet taste. Make a batch and serve them right from the pitcher over ice, or mix them with ice in a blender for frozen margaritas. |

Real Margaritas
An old college friend and her husband were visiting us from Texas on a hot summer's day. We made Margaritas using my "Margaritas for a Crowd" recipe and enjoyed them out on our porch while we caught up on each other's lives. The recipe card was on the refrigerator door. The next day, after our friends had left, I noticed a note clipped to my recipe. In my friend's husband's handwriting, it said "Real Margaritas" and listed this recipe. This Margarita definitely packs more of a punch than my "wimpy" ones do. |
