This week we call your attention to Breakfast Time! Some would argue (and I would be one of those "some") that breakfast is the most important meal of the day. Don't leave home without it! Choose from frittatas, burritos, muffins, scones and breakfast sandwiches. Some are quick enough for a weekday; others are great for the weekend or brunch. Something for everyone.

My husband and I bicycled through Ireland many years ago and stayed at many Bed & Breakfasts. The standard breakfast was "bacon, egg and tomato"; we think it was legislated by the Irish tourism board! It was good but after three weeks it got a little old. Apple Cinnamon Muffins
These moist muffins are yummy! And much better for you than the store bought variety because they have less fat and sugar and contain oats (fiber) too. Turn the oven on, mix up the batter and pop 'em in the oven. In less than a half hour, you've got hot, home baked muffins. |

Arugula & Fontina Frittata
This is an easy brunch to prepare but worthy of your finest china and crystal. Make it a very fancy spread for Christmas morning ... Panettone (basically, a light Italian raisin bread), raspberries, green grapes and watermelon (red and green for Christmas) and Canadian bacon fill out the menu, and tiny white carnations and baby red roses decorate this very elegant brunch. Substitute spinach for the arugula if you are not an arugula fan. |

Once you've had these scones you'll never want to buy the store or coffee-shop variety again. I've been making these for over 20 years, and they are still great! An 18 minute baking time means you can whip these up and be eating them in about a half hour. |
