Fun with Fennel

My husband can be credited with this month's "Fun with Fennel" feature. He came up with the alliteration months ago and has been after me to use it. I have to admit, it does have a nice ring to it.

So this month our spotlight is on fennel, an ingredient you may or may not already be familiar with. I love fennel. It has a wonderful, mildly sweet licorice flavor, and it is so versatile. Sliced very thinly and used raw in salads, it adds elegance as well as flavor. You can also saut← it, broil it, braise it and roast it.

Give it a try. Our feature recipes cover the many different preparations. To find more recipes that include fennel, go to the Search Page and enter "fennel" in the "search for" box. And stay tuned for October's "Soup for Dinner" feature: two of our new soups will have fennel in their ingredients list.

Fennel Recipes Arugula, Fennel & Orange Salad

Arugula, Fennel & Orange Salad

An elegant and delicious salad perfect for entertaining. I've served this to many people who have never had fresh fennel before and they loved it. An interesting and unique combination of flavors. You could substitute mesculun salad mix or spinach for the arugula.

Fennel Recipes Chicken Sausage & Lentils with Fennel

Chicken Sausage & Lentils with Fennel

Never had fennel before? Try it - you'll like it with its sweet licorice flavor. Never had lentils? Try 'em - you'll like 'em! The combination of the meaty lentils with the chicken sausage makes this dish a satisfying and nutritious supper perfect for a cold evening. Enjoy with a glass of red wine.

Fennel Recipes Sea Bass & Shrimp with Spicy Tomato Sauce Over Braised Fennel

Sea Bass & Shrimp with Spicy Tomato Sauce Over Braised Fennel

Fresh fennel adds a unique and pleasant taste to fish in tomato sauce. Never had fennel before? This dish is a great introduction to the delicate & wonderful flavor of braised fennel. You can make this dish as spicy (or not) as you want by controlling the amount of red pepper flakes so don't be afraid to try it. Cod, haddock or halibut can be used in place of the sea bass.

Fennel Recipes Broiled Fennel with Parmesan

Broiled Fennel with Parmesan

This is a quick and delicious side dish. The sweet licorice taste of the fennel goes well with the tomatoes and Parmesan, and the fresh basil is just the right finish. Serve with grilled or roasted meats or chicken.

Fennel Recipes Roasted Root Vegetables with Fennel

Roasted Root Vegetables with Fennel

Roasting root vegetables at high temperature produces a crisp outer skin and moist inner flesh. The natural sugars of the vegetables caramelize to add some sweetness. This is a great side dish to serve with roast turkey or roasted or grilled pork tenderloin or lamb.
