Fun with Fennel |

My husband can be credited with this month's "Fun with Fennel" feature. He came up with the alliteration months ago and has been after me to use it. I have to admit, it does have a nice ring to it.

So this month our spotlight is on fennel, an ingredient you may or may not already be familiar with. I love fennel. It has a wonderful, mildly sweet licorice flavor, and it is so versatile. Sliced very thinly and used raw in salads, it adds elegance as well as flavor. You can also saut← it, broil it, braise it and roast it.

Fresh fennel adds a unique and pleasant taste to fish in tomato sauce. Never had fennel before? This dish is a great introduction to the delicate & wonderful flavor of braised fennel. You can make this dish as spicy (or not) as you want by controlling the amount of red pepper flakes so don't be afraid to try it. Cod, haddock or halibut can be used in place of the sea bass. |
