This month we are featuring Soup for Dinner. We've got five soups that are hearty enough to make a satisfying dinner all on their own. Just add some bread and/or salad. Two of our new soups, Italian Fish Soup and Minestrone Soup with Sausage & Tortellini, have fennel in their ingredients list. Remember that we featured fennel last month?

The great thing about making a big pot of soup is that your home smells great, and you end up with leftovers that are perfect for lunch. If you want some more ideas beyond what we feature here, just go to the Search Page and select "Soups & Stews" from the pull-down menu for "Course". (Leave the "Search for" field blank.)

Minestrone Soup with Sausage & Tortellini
This soup has it all: vegetables, protein and starch. It's a complete meal all by itself. The tortellini and Italian sausage add interest and substance, and the fontina cheese melts beautifully on top of the hot soup. This soup will warm you to your toes. |

Italian Fish Soup
This delicious seafood soup is the Italian cousin of the French bouillabaisse. These soups were typically made from the day's catch and the exact ingredients varied by region. Here it's made with fish that is commonly available in New England. If you can't find sea bass or cod, substitute any other white-fleshed fish. This is a great dish to make for and with friends. All you need to add is salad and bread. |

Pea Soup
A hearty pea soup that you can make in your slow cooker or crock pot, or on top of the stove. Add smokiness with a ham bone and/or cubed ham and turkey chorizo sausage. Chunks of carrot, celery and spinach make this pea soup a real winner. Omit the meat, add some salt, substitute vegetable stock for the chicken stock, and you have a vegetarian version. |

Mexican Meatball Soup with Rice & Cilantro
I call this hearty soup a Mexican variation of Italian Wedding Soup. Small meatballs are simmered in a tomato-based broth that is spiced up with bottled salsa. This soup warms your soul. Comfort food at its best. |
