Italian Fish Soup is quick to throw together, then let it simmer while you catch up on chores or the evening news. This soup is also a great dish for casual entertaining. Chicken Cacciatore is another dish that's can be put together in no time, then finished off with some oven time. And continuing my breakfast kick: the Egg, Ham & Cheese Breakfast Sandwich is quick and easy enough for a weekday breakfast and a lot better than what you get at the Golden Arches.
Roasted Vegetable Stew with Garlic Crumble Crust
Roasted root vegetables give a heartiness to this vegetarian stew that is big on flavor and sure to satisfy any carnivore. The garlic crust adds a whole other dimension; do not even think about omitting it!
This delicious seafood soup is the Italian cousin of the French bouillabaisse. These soups were typically made from the day's catch and the exact ingredients varied by region. Here it's made with fish that is commonly available in New England. If you can't find sea bass or cod, substitute any other white-fleshed fish. This is a great dish to make for and with friends. All you need to add is salad and bread.
A hearty, full-flavored chicken cacciatore. "Cacciatore" means "hunter style" in Italian and refers to a method of cooking fresh game by sautéing it with wild mushrooms, onions, and other vegetables and then braising the meat in wine or stock. Can be made up to three days in advance.
In much less time than it takes to drive to that "fast food" restaurant and get served, you can make your own breakfast sandwich at home. And you get to enjoy it with your pajamas on!
